1 head cauliflower
|

2 eggs, beaten
|
|
Salt and pepper to taste

2 tbsp. grated Parmesan cheese

Instructions |

|
Steam cauliflower until tender, around 15 minutes.
|
|
|
When the vegetable is tender, remove it from the
steamer and place in a casserole dish with a cover,
just large enough to hold the head.
|
|
|
Pour the eggs over top of the cauliflower, add salt
and pepper, and top with cheese.
|
|
|
Bake at 375 degrees for 10 minutes, or until cheese
is melted and egg is cooked.
