1 cup sour cream ( can substitute yogourt or herb cheese )
1 cup aged cheddar cheese, grated ( or crumbled goat cheese or gogonzola )
8 oz bacon, cooked crisp and cut into large pieces ( diced hame or turkey or even smoked salmon )
3 green onions, chopped ( chives, dill, parsley or cilantro )
1 tsp salt or more to taste
Instructions
Scrub potatoes and prick them with a fork. Place on a baking sheet and bake in a preheated 400 F oven for 1 1/2 hours or until potatoes are very tender.
Cut potatoes in hal lengthwise and arrange cut side up i a single layer, tightly packed in a 9 inch baking dish.
Top with butter and spreadh with sour cream. Sprinkle with half the cheese, cooked bacon, green onions and salt. using a potato masher, partially mashthe potatoes as they site in the baking dish, just until it's all loosely mashed together. Sprinkle with remaining cheese.
Bake in a preheated 400 F oven for 20 to 30 minutes or until thoroughly heated. Makes 8 servings.
