     Hearty Beef Vegetable Stew

Ingredients
1 can (28 oz) crushed tom., undrained
3 T. quick cooking tapioca
2 T. dried basil
1 T. sugar
1/2 t. salt
1/8 pepper
1 1/2 lb. red pot. cut into 1 inch cubes
3 med. carrots, cut into 1 inch slices
1 med. onion chopped
 
1/2 c. chopped celery
1 1/2 lb lean chuck roast cut into 1 inch cubes
2 t. canola oil

Instructions
In a bowl combine the tom. tapioca, basil, sugar, salt and pepper. Let stand 15 min. Place the potatoes, carrots, onions, and celery in a 5 quart slow cooker. In a large skillet brown meat in oil over med. heat. Drain and transfer meat to slow cooker. Pour tom. mixture over the top. Cover and cook on high for 5 to 6 hours or until meat and veg. are tender.
