Combine first 5 ingrd. in large bowl. Combine vanilla and next 3 ingred. add to flour mixture, stirring until well blended -dough will be dry. Take the dough out onto a lightly floured surface, and knead lightly 7 or 8 times.
Shape dough into two 16 inch long rolls. Place rolls on baking sheet coated with cooking spray, flatten rolls to 1 inch thickness. Bake 350 deg. for 30 minutes. Remove roll from baking sheet, let cool on rack for 10 minutes.
Cut roll diagonally into 30 1/2 in. slices, place cut sides down on baking sheet. Reduce oven to 325, bake 10 minutes. Turn cookies over, bake an additional 10 minutes -cookies will be slightly soft but will harden as they cool-.
Remove from baking sheet and cool on rack. Note- to avoid burning the vegetable oil, wipe off the cookie sheet between stages.
